Who doesn’t love a beautiful, fluffy, sweet little muffin? These pocket-sized delights are a celebration for sweet-craved palates, and with an extra sprinkle of chocolate chips, the indulgence level is going to be off the charts. The best part is they are super easy to make! For those of you who have been searching far and wide for the perfect muffin recipe, look no further. Shruti Banka has broken it down for you with a step-by-step process that is the perfect formula for baking enthusiasts and beginners alike.
Let’s start baking!
- Flour (1 ¼ cups)
- Cocoa Powder (¼ cup)
- Fine White Sugar (1 cup)
- Baking Powder (1 tsp)
- Baking Soda (¼ tsp)
- Salt (1 pinch)
- Butter Milk (1 cup) (add 1 tsp vinegar to 1 cup of milk and leave it for 5 mins)
- Oil (½ cup)
- Vanilla Essence (1 tsp)
- Chocolate Chips (As per taste)
Step 1: Mix the flour, cocoa powder, baking soda, baking powder and salt together.
Step 2: Sieve the mixture a couple of times to make sure it is evenly blended.
Step 3: Add the sugar to the dry blend and mix again.
Step 4: Mix the chocolate chips in a teaspoon of flour separately to make sure it doesn’t sink in the muffin later.
Step 5: Beat the vanilla essence, buttermilk and oil together to blend well.
Step 6: Slowly add the wet mixture to the powdered blend in 2-3 parts and keep whisking.
Step 7: Keep beating the batter until it is dark brown and smooth with even consistency.
Step 8: Add the chocolate chips to the batter and continue mixing.
Step 9: Line up an aluminium baking tray with muffin liners and pour the mixture evenly into each pocket. (Make sure you fill up only 2/3rd of each pocket)
Step 10: Bake the muffins in a preheated oven at 160-degree Celsius for about 15-17 minutes. Keep checking it between.
Step 11: Once it is out of the oven, insert a toothpick to check consistency.
Step 12: Let it cool down a little and then, dig in while the muffins are still a little warm.
